Jaime Gouveia joined the staff in 2005, yet he is already highly respected and admired amongst his colleagues, and a friend for our usual patrons. He has a remarkable ability to make people feel relaxed, welcoming guests from all echelons of society. Coming from Madeira, a Portuguese island on the Atlantic coast and having previously lived in South Africa, Jaime’s astonishing honesty and genuine interest in what he does has done a considerable work to preserve the restaurant and make it work properly.

Chef

Carlos Tomas  Since October 2009 he has been playing an important role in the implementation of innovative methods in the kitchen of O Fado, combining the new systems of work used in kitchens today with the very tradition that characterizes the Portuguese cuisine. Started studying culinary at the Portuguese Army School of Sergeants , having been the head Sergeant for the feeding area in various military units during 10 years. But continued his specialization in kitchen at the School of Hospitality and Tourism of Lisbon. At O Fado he uses the young and innovative spirit to give a modern touch to Portuguese cuisine that is already so tasty.

Waiter

Paulo Simao  Very early in his life, he realized it was carrying a special aptitude and taste for the hospitality. Therefore started his apprenticeship in the hospitality at Restaurant David’s Buraca in Lisbon, where he developed a deep knowledge of the hospitality service. Since 2006 is at Fado where he developed and applied all that he likes to do most, serving customers.

The musician

João Nunes (right side on the picture)is the member of staff that has been in O Fado for the longest time. With an over privileged voice and a friendly approach to the guests, he has been enchanting people for over 22 years, with an interval in the middle, when he left to go to Portugal. If you ever come to the restaurant with a strong will for singing, do not hesitate in asking Nunes to play the guitar for you, since he is nearly always keen to learn new things. If you do not sing or play, just join us in enjoying his marvellous chant.
